The Bedford Village Inn Hosts 2012 Italian Chefs Invitational Series

Experience the finest Italian cuisine from acclaimed chefs of the East Coast to Italy

Beginning this April, New Hampshire’s acclaimed Bedford Village Inn (BVI) will further establish itself as one of the top culinary-focused inns in the country, welcoming the finest Italian chefs – from across the East coast and all the way into Italy –each whom will design and host an exclusive dinner to be enjoyed in the Inn’s Overlook Dining Room. Guests will get to enjoy unique regional Italian culinary styles, as well as have the opportunity to meet these extraordinary individuals and discuss their “recipes for success”.

This monthly Italian Chef Invitational Series will run from spring and summer throughout the fall, in order to take advantage of the freshest seasonal ingredients from each season the chefs specializes in, respectively. The dinners will be set for a maximum of 50 guests and will include a four course, wine paired meal plus welcome hors d’oeuvres and a cash bar. Each chef will prepare authentic courses representative of their restaurants. New Hampshire’s sole sommelier, Jon Carnevale, has worked with each chef to pair the best wines with their cuisine.

This six dinner series will kick off on Saturday, April 14 when the BVI welcomes back its former Executive Sous Chef Jeff Michaud, now Executive Chef/Co-Owner at Philadelphia’s Osteria and Amis Restaurants alongside Marc Vetri. His menu will consist of: Stuzzichini: Open piadinia with rabbit mortadella & burrata; First Course: Spring seafood “cacciucco” with peas, chili, red onion & fettunta; Second Course: Beet and goat cheese plin with tarragon; Third Course: Whole roasted pork shoulder with accompaniments (Artichoke mostarda, fava bean salad & ramp pesto marinated potatoes); Fourth Course: Pistacchio Flan with fiordilatte and marinated strawberries. The pre fixe cost is $89 per person plus gratuity and tax.

Continuing the Italian theme, the following week the BVI will host its Abbondonza!: An Italian Celebration of Food on Saturday, April 21. Bound to be one of the biggest events of the year besides the Ice Bar, the Inn will use owner Jack Carnevale’s family recipes to create a lavish Italian feast. The feast will be served at various stations in the Great Hall to include seafood, appetizer/antipasto, carving meat, pasta, dessert and much more. This event is $45 per person plus gratuity and tax, and will last from 5:30 until 8:30 p.m. Reservations are required.

On Saturday, May 12, the second installment of the Italian Chef Invitational Series will feature Chef Dante de Magistris of Cambridge, Mass.’s critically acclaimed Restaurant dante. His menu will consist of: Stuzzicare: Fava Bean Custard & Pecorino Ginepro; Antipasto: Grilled Cotechino, Charred Fennel Salad, Citrus & Crostone; Strozzapreti Pasta: Baccala “Meatballs”, Tomato Sugo, Pine Nuts & Grappa Soaked Golden Raisins; Pollo: Sicilian Style Confit Chicken, Spring Vegetable Ragu & Potato Basil Aioli; Profiteroles: Chocolate Hazelnut Cream Puffs, Spiked Ganache & Caramelized Hazelnut. The pre fixe cost is $69 per person plus gratuity and tax.

The fall portion of the series will feature chefs from Italy, Washington D.C., and Boston including, but not limited to, Chef Lorenzo Polegri of Italy’s Zeppelin Ristorante and Chef Mike Isabella, Chef/Owner of Graffiato in Washington, D.C.

About Jeff Michaud

Michaud attended the Culinary Institue of America and began his career working under Marc Vetri at Ristorante Vetri before spening several years touring Italy in Michelin 3 Star restaurants. Upon returning to the U.S., Michaud took several positions throughout New England before returning to Philadelphia and rejoining the Vetri team to open Osteria. In 2008, The James Beard Foundation nominated Osteria for “Best New Restaurant” and in 2012, Jeff won the James Beard Award for “Best Mid Atlantic Chef.”
